It seems to manage this every vintage and is just such a brilliant drinking wine. 2018 is another excellent year here, with deep fruitfulness of brambled hedgerow alongside liquorice and woodsmoke. It has a polyphenol index of 84IPT, so this is full of tannins but they don't feel overpowering. Tasted several times and always striking. 45% new oak. 3.57pH. Drinking Window 2024 - 2036 5/1/2019 Jeb DUNNUCK JEB DUNNUCK (JEB DUNNUCK) : 91-93 / 100 The inky colored 2018 Château Ormes De Pez checks in as 50% Merlot, 41% Cabernet Sauvignon, 7% Cabernet Franc, and the balanced Petit Verdot that’s still aging in 45% new French oak. It offers lots of ripe black cherry and blackberry fruits intermixed with subtle violets and background oak. The 14.6% alcohol is evident, and yet the wine shows terrific balance, as well as quite a bit of promise. Most importantly, I am blown away by how much precision and persistence there is given the wine's concentration and overall richness. The 2018 Canon is magnificent. That's pretty much all there is to it. The blend is 72% Merlot and 28% Cabernet Sauvignon. Technical Director Nicolas Audebert added that he and his team left more leaf cover to protect the fruit from the extreme heat and dryness of the summer. Once in the cellar, extractions were done as gently as possible, Audebert explained. Made from a blend of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon, the wine reached 14.48% with a pH of 3.51. The harvest took place September 28 to October 10. There is an addendum here, the wine is so packed, it's as if a double magnum of wine was placed into a standard bottle. Is it too much for its own good? Very deep purple-black in color, the nose starts off quiet and stern, swiftly growing exponentially in the glass to reveal powerful plum preserves, fruitcake, coffee beans, smoked meats and black olives scents with emerging nuances of roses, hoisin, molten chocolate and licorice plus a waft of candied violets. WOW—the palate explodes with waves of black fruit preserves, exotic spices and savory chocolate, framed by very firm, super ripe, velvety tannins and an electric backbone of freshness, finishing with epic length and energy.
